A Friggin Delicious & Easy to make Shrimp Curry

*Duration~ 1 hour for marinade and prep/30 minutes for cooking

*Servings~ 2 hangry women/4 regular appetite individuals


Ingredients

Shrimp Marinade

  • 1 pound of peeled shrimp

  • 1/4 teaspoon of salt

  • 1/4 teaspoon of black pepper

  • 1/4 teaspoon of cayenne pepper

  • 2 tablespoons of lemon juice

Curry Sauce

  • 1 tablespoon of coconut oil

  • 1 medium onion chopped

  • 3 cloves of garlic minced

  • 1 tablespoon of fresh/dried ginger

  • 1/2 teaspoon of black pepper

  • 1/2 teaspoon of salt

  • 1/2 teaspoon of turmeric

  • 2 teaspoons of ground coriander

  • 1 teaspoon of curry powder

  • 14.5 ounces of diced tomatoes

  • 13.5 ounces of coconut milk full fat

  • Cooked rice, cauliflower rice, or potatoes for serving



Marlee's very own Babe's in paradise cocktail

  • 2 ounces of vodka/flavored rum

  • 1/2 cup of so delicious brand coconut milk

  • 1/2 cup pineapple mango organe juice

  • 2 mint leaves

  • 1 basil leaf

  • 3 orange slices

  • cherries for garnish






Step ~By~ Step Shrimp Curry

  1. Place your shrimp in a to go container with a lid

  2. To the shrimp add the marinade ingredients

  3. Place shrimp in the fridge to marinate for one hour

  4. While shrimp is marinating prepare the rest of your ingredients

  5. When the shrimp is about halfway done marinating start the recipe

  6. To a heated sauté pan add the coconut oil

  7. Then add your onions and garlic and cook those together until translucent

  8. Next add all 7 of your spices

  9. Sauté for one minute to release the aromas of the spices

  10. Now add your coconut milk and diced tomatoes then stir until fully combined

  11. Bring mixture to a boil and then turn down your heat and simmer for 5 minutes or longer if need be

  12. Once shrimp is done marinating add to the curry sauce and cook until shrimp is pink about 5 minutes

  13. Serve over rice and enjoy !

Step ~By~ Step Babe's in paradise cocktail

  1. Grab yourself a tall glass

  2. In the bottom of the glass add 1 orange slice, mint leaves, and basil leaf and you guessed it MUDDLE!

  3. Add glass to the ice about 3/4 of the way

  4. Pour in 2 ounces of vodka or flavored rum

  5. Pour in 1/2 cup coconut milk

  6. Pour in 1/2 cup of juice

  7. Grab a bar shaker put on top of your glass flip it over and shake

  8. Pour pack into tall glass and add cherries and remainder of oranges as a garnish

  9. Throw it back and immediately make yourself another one you deserve it
