Guiness Chocolate Cheesecakes & Baileys Whipped Topping

T'is the season for Irish car bombs, Guinness, & Baileys !!!!! To celebrate one of our favorite holidays we hopped back into the whiskey kitchen to try out these cute little cheese cake pans that I thrifted. Guinness and chocolate were made for each other and when you combine that with cheesecake its a decadent party for your senses. So we hope you enjoy :)
PSA: This recipe can be made in a traditional 9 inch cheesecake pan with the same ingredient ratios
Servings~ 6 to 8 people
Prep Time~ 10 minutes
Assembly Time~ 20 minutes
Cook time~ 60 minutes
Cool Time~ 60 minutes
Ingredients~
Three 8 ounce packages of cream cheese
Four Tablespoons of heavy cream
One teaspoon of vanilla extract
One cup of sugar
Three eggs
Two tablespoons of melted butter
One cup of graham crackers crushed
One tablespoon of cocoa powder
3/4 cup of Guinness
Twelve ounces of dark/milk chocolate
One ounce of baileys
One tablespoon of sugar

Instructions ~
Make your crust first by combining crushed graham crackers, cocoa powder, and melted butter
Next melt your chocolate and 2 tablespoons of heavy cream together either by microwaving in 10 second intervals or on the stove on a double broiler. Be careful not to burn chocolate go slow and easy with either method
Now add your softened cream cheese to your mixer and mix with paddle attachment until light and fluffy
To the cream cheese add eggs, Guinness, sugar, chocolate mixture, and vanilla extract and blend till incorporated
Spray non stick spray into your cheesecake pan and press the graham cracker mixture to form a crust bottom
Then carefully add and spread evenly your cheesecake mixture being careful not to over fill
The cheesecakes with go in the oven at 350 degrees for one hour
After baked place the cheesecakes in your fridge and cool for one hour before serving
In the meantime you can make your whipped topping by adding reaming heavy cream, sugar, and baileys. mix until light and fluffy
